Black Bean Brownies (Flourless, Gluten-Free)

BySarah Axtell, ND July 16, 2014

Let’s get real – we’re not eating enough fiber, and it’s impacting our health in ways we might not even realize. That’s why I’m obsessed with my Black Bean Brownies. Not only are they ridiculously moist and loaded with chocolate, but they’re also packed with fiber-rich black beans that can help lower cholesterol, support weight loss, and even balance hormones. With every bite of that gooey chocolate center, you’ll be satisfying your sweet tooth AND you’ll be treating your body to some serious benefits, from reducing colon cancer risk to promoting gut health.

Black Bean Brownies

Ingredients:

  • One 15-ounce can black beans, drained and rinsed well
  • 3 eggs
  • 1/4 cup avocado oil or olive oil
  • 1/3 cup maple syrup
  • 1/2 cup cacao powder (or unsweetened cocoa powder)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch salt
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 teaspoon flaky sea salt (optional for topping)

1. Preheat the oven to 350°F. Lightly oil or coat an 8 x 8-inch baking pan or dish with nonstick cooking spray and set aside.

2. Place the black beans in a food processor and process until smooth and creamy. Add the eggs, oil, maple syrup, cacao powder, vanilla extract, baking powder, and salt and process until smooth.

3. Pour the batter into the prepared pan. Add chocolate chips and mix them in well. Top with more chocolate chips if your heart desires!

4. Bake approx. 20 minutes, or until a fork inserted in the center comes out clean. You don’t want to over-bake. Pulling them out earlier makes them nice and moist.

5. Sprinkle generously with flaky sea salt if using.

Enjoy!
