Easy Quinoa Egg Muffins

A high-protein breakfast can have many benefits to our bodies. Eating a protein-rich breakfast helps you feel full and satisfied longer and keep your blood-sugar levels steady throughout the day. It can also optimize your brain’s ability to send messages to the rest of your body, helping you wake up and provide the amino acids your brain needs to function at its optimal level.
Follow this recipe for an easy to grab morning breakfast that’s packed with protein. It’s easy to make a batch, or two for the whole family, at the beginning of the week and store in the refrigerator for an easy heat-and-eat breakfast during the work week.
Savory Quinoa Egg Muffins
Ingredients:
- 1 cup cooked quinoa
- 6 organic eggs, whisked
- 1 cup diced veggies of your choice
- spices of your choice
Directions:
Preheat oven to 350°F. Coat muffin tins with cooking spray. Combine ingredients and pour mixture into tins.
Bake for 30 minutes. Let cool before serving.
Store leftover muffins covered in refrigerator.
Heat two muffins for breakfast during the week and enjoy!
