Chocolate Chip Tahini Blondies

These Chocolate Chip Tahini Blondies are a fiber-fueled, mineral-rich chocolatey treat. Tahini (or sesame seed paste) is one of the most nutrient dense foods. We typically think of it as an all- star ingredient in hummus, but there are so many other uses- like in dessert! Tahini helps to stabilize blood sugar (thanks to the fat, protein, and fiber it provides), is a good source of bone-building calcium, and is good for your heart as it can reduce total cholesterol and LDL.
I use Bob’s Red Mill Oat Bran to boost the fiber. Oat bran contains beta glucan, a type of soluble fiber that improves cholesterol, diabetes, and gut health.
Regular oat flour will also work. I prefer oat bran due to the fiber content!

Dry Ingredients:
- 3/4 cup Bob’s Red Mill Oat Bran (or oat flour
- 3/4 cup almond flour
- 1/4 cup ground flaxseeds and/or chia seeds
- 1 tsp baking soda
+ 1 cup dark chocolate chips
Wet Ingredients:
- 1/2 cup tahini
- 1/3 cup maple syrup
- 2 tsps vanilla extract
- 2 eggs
- 1/4 cup avocado oil
Instructions:
- Preheat oven to 350 degrees F. Grease an 8×8 baking pan.
- In a large bowl, mix together the wet ingredients until smooth.
- Add the dry ingredients. Fold in the chocolate chips.
- Bake for 20-25 minutes until edges are slightly golden.
