Crockpot Chicken Tacos with Roasted Brussels and Chipotle Lime Aioli

This is a staple in our house. Whether it’s taco Tuesday or you just need a quick and easy weeknight dinner, these Crockpot Chicken Tacos are sure to please the whole family. Super easy and super delicious!
Ingredients:
- 1.5-2 lbs chicken breasts
- 1 jar verde salsa
- 1/4 cup water
- 1 lb brussels sprouts, chopped
- 2 TBSP avocado oil
- Salt and pepper
- juice of 2 limes
- 1/2 cup mayo
- 1-2 tsps Chipotle Lime seasoning (Trader Joe’s)
- Almond flour tortillas (Trader Joe’s or Siete)
- Cilantro as a garnish
Instructions:
- Place the chicken, salsa, and water in a slow cooker. Cook on low setting for 6-8 hours.
- Remove chicken and shred.
- On a parchment-lined baking sheet, toss brussels with avocado oil, salt, and pepper. Roast at 375 degrees F for 20-25 minutes (until crispy), tossing halfway.
- In a small bowl, whisk together mayo, Chipotle Lime seasoning, and lime juice.
- Serve the shredded chicken in tortillas. Top with roasted brussels, chipotle lime aioli, and cilantro.
