Green Goddess Gnocchi Skillet

If you’re looking for a easy, comforting, healthy dinner, you’ve got to try my Green Goddess Gnocchi Skillet. It’s packed full of fiber and protein. This skillet recipe is also an easy way to get your greens in for the day. I get all the ingredients from Trader Joe’s including the gluten-free cauliflower gnocchi (found in the frozen section).
Add this one to your weeknight rotation- it’s a winner!
Green Goddess Gnocchi Skillet
4-5 servings
Ingredients:
- 2 packages of Trader Joe’s Cauliflower Gnocchi (frozen)
- 2 TBSP olive oil
- 1 container of Trader Joe’s Vegan Kale, Cashew, and Basil Pesto
- 1 bag of Power to the Greens (mix of kale, chard, spinach, and collards; could also use bag of spinach)
- 1 package of Trader Joe’s Chicken Meatballs, cut into halves
- 1 can cannellini beans, drained and rinsed
- 1/2 cup finely shredded fresh Parmesan cheese (optional; can use nutritional yeast if dairy-free)
- Chopped parsley for topping (optional)
Instructions:
- Preheat oven to 400 degrees F.
- Heat a large oven proof skillet over medium heat with olive oil. Add the frozen cauliflower gnocchi to the skillet in a single layer. Cook the gnocchi, flipping occasionally, about 3-4 minutes.
- Add the whole container of pesto to the skillet and reduce the heat to low.
- Stir in the bag of greens.
- Add the beans and chicken meatballs. Mix well. After cooking over low heat for a couple of minutes, gnocchi should be almost cooked through.
- Remove from heat and top with parm (optional).
- Transfer the skillet to the oven and bake x 8 minutes.
- Top with fresh herbs if desired.
