Mediterranean Smash Burger Tacos with Tzatziki

I’ve been seeing those viral smash burger tacos all over my feed and had to put my own spin on them. This version is leaner thanks to ground turkey, but it’s packed with so much flavor from the olives, sun-dried tomatoes, feta, and fresh herbs. Smash it all onto a tortilla until the edges get crispy, then top with tzatziki. It’s fast, fresh, and tastes like a Greek vacation on a Weds night. Enjoy!
For the turkey smash mix:
- 1 lb ground turkey
- ⅓ cup kalamata olives, pitted and chopped
- ⅓ cup sun-dried tomatoes packed in oil
- ½ cup crumbled feta cheese
- 3 TBSP fresh herbs, finely chopped — dill, basil, mint
- Salt, pepper, garlic powder
For assembly:
- 4-5 small tortillas (I use TJ’s almond flour tortillas)
- Toppings of your choice: Tzatziki (see below), extra feta, chopped cucumber and tomatoes, pickled red onion, fresh herbs, sauerkraut, hummus, microgreens
Instructions:
- In a medium bowl, gently combine ground turkey, chopped kalamata olives, sun-dried tomatoes, feta, fresh herbs, garlic powder, salt, and pepper.
- Set a large skillet over medium-high heat. Add a drizzle of olive oil.
- Place one tortilla on a cutting board. Take ground turkey mixture ball and press it onto the tortilla, spreading it thin all the way to the edges. You can use a burger press if you have one.
- Place tortilla meat-side down in the hot pan. Press down firmly with a spatula (or burger press) for 10 seconds to get good contact. Cook ~3 minutes.
- Flip and cook the tortilla side 1-2 minutes until lightly toasted and the turkey is cooked through.
- Top with a big spoonful of tzatziki (recipe below) and any other toppings of your choice.
Tzatziki
Ingredients:
- ½ cup grated cucumber
- 1 cup plain Greek yogurt (I use 2% Fage)
- 1 TBSP lemon juice
- 1 tsp extra virgin olive oil
- 1 garlic clove, minced
- ¼ tsp sea salt
- 2-3 TBSP fresh herbs (dill, mint, basil)
Instructions:
- Squeeze the water out of the grated cucumber. This step is essential for making a creamy tzatziki. Squeeze the cucumber directly over the sink, or press it lightly between kitchen or paper towels.
- In a medium bowl, combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt, and fresh herbs.
