Salmon Salad with Lemon, Capers, & Dill

Canned salmon is an underrated pantry staple. Not only is it convenient, but it’s an excellent source of brain-nourishing, heart-healthy omega-3 fatty acids. And it’s cheap! And for those of us whose families might not be the biggest fans of fish, this salmon salad recipe is an easy lunch option. Whip up a batch just for you! A perfect Mom lunch!

If you get canned salmon with bones, it’s a great source of calcium. Otherwise, it’s fine to get the boneless option. Opt for wild-caught if possible. I like the wild sockeye canned salmon from Trader Joe’s (contains bones!) and the Kirkland wild-caught canned pink salmon from Costco (boneless).

Ingredients:

  • 2 cans of salmon, drained
  • ΒΌ cup mayo
  • 1 TBSP dijon mustard
  • 1 TBSP lemon juice
  • 1-2 TBSP capers (or you could use diced pickle)
  • 2 TBSP fresh dill, chopped
  • Salt and pepper to taste

Instructions:

  1. Add drained salmon to a bowl and mash it with a fork.
  2. Add the other ingredients and mix well.
  3. Serve over salad greens, inside a lettuce wrap, on top of a crunchy cracker, or on top of your favorite bread.

Store in the fridge for up to 3-4 days.

Air-Fryer Chicken & Broccoli Gnocchi Bowls

My husband and girls were recently out of town so I was left to my own devices for dinner. I whipped up this Girl dinner in under 12 minutes. I’ve been making it at least once a week since then- it’s that good (and so easy). The Grilled Chicken with Power Veggies is found at Costco in the frozen section. It’s not organic, but that’s ok. It’s still a nutrient-dense meal packed full of protein and fiber. Progress not perfection!

I always put my food in a glass pyrex dish before throwing it in the air fryer. That way my food doesn’t touch the teflon coating lining the air fryer, and it makes for super easy clean up!

You could totally bake this in the oven if you don’t have an air fryer. Might take a bit longer- closer to 15 minutes.

Ingredients:

  • 1 cup frozen cauliflower gnocchi (Trader Joe’s)
  • 1 3/4 cup frozen Chef Hak’s grilled chicken with power veggies (Costco)
  • Drizzle of EVOO
  • 5-6 cherry tomatoes
  • Seasonings of your choice- salt, pepper, oregano, thyme, nutritional yeast, garlic
  • Handful of arugula or any green of choice
  • 2 TBSP shredded parm

Instructions:

  1. Preheat air fryer to 400 degrees.
  2. In a glass pyrex dish, combine the gnocchi, grilled chicken with power veggies mix, and tomatoes. Drizzle with EVOO and season with your favorite seasonings. Mix well.
  3. Bake in the air fryer x 10 minutes.
  4. Remove from air fryer and top with cheese. Bake for another 2-3 minutes.
  5. Remove from air fryer and top with a handful of greens.
