Sunshine Caesar Salad with Roasted Cauliflower

This salad incorporates the following superfoods: cauliflower, turmeric, walnuts, and capers.
Cauliflower belongs to the cruciferous vegetable family. Cruciferous vegetable consumption has been implicated in the prevention of many different cancers, including lymphoma, breast, prostate, bladder, and lung cancer. Cruciferous vegetables contain the anti-cancer substances, sulforophane and indole-3-carbinol.
Turmeric has the following health benefits:

- Supports the immune system

Lastly, capers are the superfood ingredient in the dressing. In addition to adding a briny, savory punch of flavor to the dressing, they pack a hefty dose of the antioxidant quercetin, which is anti-inflammatory and may help inhibit the growth of several types of cancer.

Ingredients:
- 2 cups cauliflower florets
- 1 TBSP avocado oil
- 1 tsp ground turmeric
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 4 cups salad greens
- 1/3 cup chopped walnuts
Dressing
- 1/4 cup olive oil
- 1 TBSP dijon mustard
- 1 TBSP almond butter
- 2 tsps maple syrup
- 1 TBSP gluten-free soy sauce (tamari)
- 1 TBSP lemon juice
- 1/2 shallot, minced
- 2 TBSP capers
- 1 garlic glove
- 1 tsp ground turmeric
- 1/4 tsp black pepper
Instructions:
- Preheat oven to 375 F.
- Add cauliflower to parchment-lined baking sheet. Toss with avocado oil, turmeric, salt, and pepper. Bake for 20 minutes. Let cool.
- Make dressing: Combine all ingredients in a food processor or blender and process until smooth.
- In large salad bowl, add greens and roasted cauliflower. Toss with salad dressing. Top with walnuts.
