Quinoa Bowls with Creamy Lemon Tahini Dressing

Quinoa bowls make for a super healthy, filling, AND easy lunch or dinner. The concept is simple: Make a big batch of quinoa and then top with roasted veggies, nuts/seeds/protein of your choice, and your favorite dressing. I often make a big batch of quinoa at the beginning of the week (always boiling it in veggie broth or chicken broth to give it more flavor!). And then I top with whatever leftover roasted veggies I have. My go-to dressing is Lemon Tahini Dressing.
Sometimes I top with pesto, which is delicious!

This is a recipe the whole family can enjoy. It is sure to please even the pickiest of eaters, as it is deconstructed and allows each individual to build their own colorful bowl.
Ingredients:
- 2 cups cooked quinoa (I boil in veggie broth, chicken broth, or bone broth)
- 4 cups roasted vegetables of your choice (I often roast sweet potatoes, cauliflower, and broccoli; I season with avocado oil, salt, pepper, and turmeric and bake at 375 F for 30 minutes)
- Nuts, seeds, or protein of your choice (baked salmon, chicken, shrimp, or beans)
- Lemon Tahini Dressing
Instructions:
Assemble each bowl by starting with a scoop of quinoa. Top with a generous helping of roasted vegetables. Add a dollop of dressing or pesto. Top with protein of your choice- pumpkin seeds, walnuts, black beans, leftover baked salmon or chicken.
