Baked Feta Spaghetti Squash

As the weather cools down, warm up with a comforting, creamy, and healthy twist on a classic pasta dish. This Baked Feta Spaghetti Squash recipe combines the natural sweetness of roasted squash with the tangy richness of feta. Loaded with flavor (and fiber!) and sure to satisfy your cravings.
Ingredients:
- 1 spaghetti squash, halved lengthwise and seeded
- 3 TBSP olive oil
- 1 (4 oz) block of feta, halved
- 8 ounces cherry tomatoes
- 3-4 garlic cloves, minced
- 1 small red onion, diced
- Salt and pepper
- Fresh basil, chopped (as a garnish; optional)
Instructions:
- Preheat oven to 400 degrees F.
- Place the spaghetti squash halves, cut sides up, in a large glass casserole pan.
- Drizzle with olive oil. Season with salt and pepper.
- Place the feta halves, cherry tomatoes, onion, and garlic in the squash.
- Bake until the squash is tender, about 50-60 minutes.
- Remove from oven. Using a fork and tongs, scrape the squash contents in a bowl. Drizzle with more olive oil, salt, and pepper. Top with fresh basil and serve with your favorite protein (chicken sausages or chicken meatballs are good!)
