Broccamole

BySarah Axtell, ND June 6, 2016

Why not add broccoli to your favorite guac recipe? Broccoli is part of the cruciferous vegetable family and contains potent anti-cancer compounds. It is also a powerful detoxifying food. The fat in the avocados helps with the absorption of many of the vitamins and minerals in broccoli so it is a perfect pairing. Enjoy on top of fish tacos or as a a healthy dip.

Ingredients

  • 1 cup broccoli florets, steamed
  • 1 medium avocado, cubed
  • 1-2 tbsp lime juice
  • 1/2 tsp ground cumin
  • 1/4 tsp ground coriander
  • 1/4 tsp sea salt
  • Pinch of cayenne (optional)
  • 3 green onions, minced or 1 tbsp finely chopped red onion
  • 1 tbsp chopped oregano ( or use 1 tsp dried if you do not have fresh)

Instructions

Steam the broccoli florets until very tender and beginning to fall apart, about 6-7 minutes. Transfer to a medium sized bowl and break florets up with a fork.

When broccoli is cool, add avocado, lime juice, cumin, coriander, salt and cayenne, using the fork to mash it into a consistency you like. Add in the scallion (or red onions) and oregano, mixing to combine.
