Crispy Baked Tofu

You can add this crispy baked tofu for a protein source in all sorts of meals or add to salads.  It goes great with Asian and Thai inspired meals.

Ingredients:
Firm or super firm tofu (buy organic)
Olive oil cooking spray

Preparation:

Remove the tofu from the package and wrap it in a clean paper towel. Place it on a plate then put another plate on top of it. Add a few heavy items on top like cans or cookbooks. Allow to sit for 30 minutes or until most the of water has drained onto the bowl.

Instructions:

  • Preheat oven to 400 degrees.
  • Once the tofu is drained, cut into squares of desired size.
  • Lightly spray a baking sheet with olive oil and place the tofu on it in a single layer, the spritz with more olive oil to ensure that the tofu is well coated.
  • Bake for 15 minutes. Remove from the oven and flip. Return to the oven and bake for another 15 minutes or until the tofu is golden brown.

Store in a sealed contained in the fridge
