Healthy Thin Mints: Only 4 Ingredients

If you like Girl Scout cookies, specifically Thin Mints, you are going to love these. My daughter and her friend recently whipped these up. I’m thrilled when my kids find joy in the kitchen, regardless of the recipe. Bonus when it’s a healthy recipe!

Ingredients:

  • 2 cups Simple Mills Chocolate Brownie Thins (I get these at Costco; Target and Whole Foods also carry them)
  • 1 cup chocolate chips
  • 1-2 tsp olive oil
  • 3-5 drops of peppermint essential oil

Instructions:

  1. In a glass bowl, combine chocolate chips and olive oil. Microwave in 30 second intervals, stirring in between, until it is fully melted.
  2. Add a few drops of peppermint essential oil.
  3. Dip the Chocolate Thins in the melted chocolate to fully coat the Thins.
  4. Place on a parchment lined baking sheet and freeze for 20 minutes.
