Easy Summertime Watermelon Basil Salad

With this week’s CSA box, I was inspired to make Watermelon basil salad! This is the perfect side dish for a hot summer day, as the watermelon will help to keep you hydrated –as this fruit is over 90% water! Whenever you have the chance, use fresh herbs! Here are some insights into the star herb of this dish – Basil! Basil is rich in nutrients such as vitamins A, K, and C and minerals like potassium, calcium, and magnesium. Due to basil’s antimicrobial and anti-inflammatory properties, basil can help to fortify the body’s immune system. This makes it the perfect side dish as we head into the Fall season.

Ingredients

1/2 small to medium sized Watermelon (seedless is preferred, and chilled)

1/2 cup fresh basil, chopped

1/2 cup red onion, sliced

2tbsp lime juice

Balsamic glaze

Instructions

  1. Slice the watermelon in half. Then either scoop out watermelon with a spoon or slice into cubes. Place into a bowl.
  2. Add chopped basil, sliced red onion, and lime juice. Then top with balsamic glaze!
  3. Enjoy!
