Grapefruit and Arugula Salad with Avocado

Looking for glowing skin? Your skin is a reflection of your internal environment, so start with antioxidants. This Grapefruit and Arugula Salad with Avocado combines vitamin C from ruby red grapefruit to support collagen production, plus lycopene (the carotenoid antioxidant that gives ruby red grapefruit its distinctive red color) for added protection against oxidative stress. It also features nutrient-dense arugula rich in protective phytochemicals, and avocado for healthy monounsaturated fats and skin-supportive vitamin E. And the pomegranate adds little bursts of sweetness (and antioxidants!).

This salad has all the flavors covered, sweet, tangy and a little bitter. We don’t eat enough bitter foods. Eating bitter foods, such as arugula and grapefruit, can be beneficial for liver health as they stimulate bile production, which aids in the removal of toxins and promotes healthy digestion. The bitter compounds in these foods also activate the liver’s natural detoxification pathways.

Ingredients

  • 2 cups arugula
  • 2 cups Spring mix (or any other salad greens)
  • 2 grapefruits, peeled and sectioned
  • 1/2 cup pomegranate seeds
  • 1 avocado, sliced
  • ¼ cup hemp seeds
  • ¼ cup walnuts

For the Dressing:

  • 1 tbsp rice vinegar
  • 1 tbsp apple cider vinegar
  • 2 tbsp grapefruit juice (freshly squeezed from the grapefruit included in the salad)
  • 1 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 2 tsps nutritional yeast
  • 1 tsp turmeric
  • ¼ cup olive oil
  • 1/2 shallot
  • Salt and pepper to taste

Instructions

  1. Peel and section grapefruit. Squeeze membranes over a bowl to extract juice.
  2. Add dressing ingredients (including juice of grapefruit) to food processor. Process until well combined.
  3. In a large salad bowl, add salad greens, avocado, grapefruit, pomegranate seeds, hemp seeds and walnuts. Toss with dressing right before serving.
