Greek Green Goddess Bowls with Turkey Meatballs

This is bright, herby, high-protein, and perfect for meal prep. Herbed turkey meatballs + creamy tzatziki + roasted broccoli over your choice of base.

Double the recipe of the turkey meatballs! They freeze well. (I bake them, let cool, and then freeze).

For the Turkey Meatballs

Ingredients:

  • 1 lb ground turkey
  • 1/4 cup fresh basil, finely chopped
  • 1 egg, whisked
  • 1 TBSP Green Goddess seasoning (Trader Joe’s) – sub: 1 tsp each dried parsley, garlic powder, onion powder
  • 1/3 cup almond flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup feta, crumbled
  • 1-2 TBSP olive oil for brushing, or olive oil spray

Instructions:

  1. Preheat oven to 375°F. Line a baking sheet with parchment.
  2. In a large bowl, combine all of the ingredients and mix well.
  3. Shape the meatballs and place on parchment-lined baking sheet. Brush or spray with olive oil.
  4. Bake approx. 20 minutes.

For the Roasted Broccoli

Ingredients:

  • 4 cups broccoli florets
  • 2-3 TBSP olive oil
  • Salt, pepper, and garlic powder to taste
  • 1/4 cup nutritional yeast (optional but a great way to boost B12 and flavor!)

Instructions:

  1. Toss broccoli with oil and seasonings.
  2. Spread on a separate sheet pan or around meatballs. Roast until edges are crisp, about 15-20 mins.

For the Tzatziki

Ingredients:

  • ½ cup grated cucumber
  • 1 cup plain Greek yogurt (I use 2% Fage)
  • 1 TBSP lemon juice
  • 1 tsp extra virgin olive oil
  • 1 garlic clove, minced
  • ¼ tsp sea salt
  • 2-3 TBSP fresh herbs (dill, mint, basil)

Instructions:

  1. Squeeze the water out of the grated cucumber. This step is essential for making a creamy tzatziki. Squeeze the cucumber directly over the sink, or press it lightly between kitchen or paper towels.
  2. In a medium bowl, combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt, and fresh herbs.

Choose Your Base and Assemble the Bowls

Base options:

  • Spaghetti Squash: Halve, scoop seeds, brush with oil, roast cut-side down at 400°F for 40 min until strands pull easily. Fluff with fork.
  • Cauliflower Rice: Sauté 4 cups riced cauliflower in 1 tsp olive oil over medium-high 5-6 min with salt, pepper, and a pinch of garlic powder.
  • Brown Rice: Cook 1 cup dry brown rice in 2 cups water. Simmer on low x 30 minutes until water is absorbed and rice is tender. Season with a little olive oil and salt. *Time saver- use frozen brown rice (I get pre-cooked, frozen brown rice from TJ’s).
  1. Spoon about 3/4 – 1 cup of your base into each bowl.
  2. Add meatballs and a generous serving of roasted broccoli.
  3. Top with tzatziki, extra fresh herbs, and more feta if you like.
  4. Finish with: lemon wedge, drizzle of olive oil, and cracked pepper. Optional add-ons that are great here: cherry tomatoes, Kalamata olives, pickled red onion, or hummus.
