Oatmeal Chocolate Chip Cookies

I’m not a huge baker, but I do have a sweet tooth so I try to keep healthy options around. These chocolate chip cookies are a staple in our house. They’re easy, and they’re relatively low in sugar and high in fiber thanks to the oats and ground flaxseeds. I always double the recipe because they go quickly!

Ingredients:

Dry Ingredients

  • 1 cup oat flour (simply process oats in your food processor or blender and voila, you have oat flour!)
  • 3/4 cup rolled oats
  • 1/4 cup ground flaxseeds
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup coconut sugar
  • 1/3 cup chocolate chips

Wet Ingredients

  • 1/3 cup almond milk, unsweetened
  • 1/2 tsp vanilla
  • 1/3 cup coconut oil, melted (or you can use avocado oil or olive oil)
  • 1 egg
  • 1 banana, mashed

Instructions:

  1. Preheat oven to 350 F.
  2. In a large mixing bowl combine the dry ingredients and mix well.
  3. In a separate mixing bowl combine the wet ingredients and whisk together.
  4. Add the wet ingredients to the dry ingredients and mix well.
  5. Add dough to greased cookie sheet. Bake for 15 minutes.

Healthy add-ins (optional):

  • 1/4 cup chia seeds (for an added fiber boost!)
  • 1/4 cup chopped walnuts (for added omegas!)
  • 1/4 cup unsweetened coconut flakes
