These Pumpkin Blueberry Flax Muffins taste like fall, AND they’re packed with fiber, omega-3s and hormone-supportive lignans, all thanks to the flax!

If you’ve ever heard “phytoestrogen” and gotten nervous — especially around breast health — here’s what you should know. Flax is rich in lignans, a type of phytoestrogen that is nowhere near as potent as your body’s own estrogen and works completely differently and is deemed safe and protective. We have two estrogen receptors: Alpha, the one targeted in breast cancer, and Beta, which is protective and acts like a tumor suppressor. Flax lignans preferentially bind to that Beta receptor. That’s why research shows they’re not just safe, but protective, and may even enhance the effectiveness of tamoxifen.

Flax also helps improve how you metabolize estrogen — shifting it away from the strong, stimulatory 16-OH form toward the weaker, more protective 2-OH form, without meaningfully changing your actual blood estrogen levels. That shift is why it can help with things like acne, fibroids, cramps, and heavy periods, and why it’s studied for protection against breast cancer especially after menopause. Beyond hormones, it’s been shown to help with LDL, triglycerides, and fasting blood sugar.

One important tip: you have to use ground flax to get the lignans — whole seeds pass right through. I keep a bag of ground flaxseeds in the fridge or freezer and aim for 1-2 tablespoons a day. You can add flax to baked goods, smoothies, or oatmeal. These muffins make it easy to get in this hormone super food.

Pumpkin Blueberry Flax Muffins

Wet Ingredients:

1/3 cup olive oil

1/3 cup honey or maple syrup

1 cup pumpkin puree (from a can)

2 eggs

Dry Ingredients:

2 tsp baking soda

1 tsp cinnamon

¼ tsp sea salt

1 cup oat flour or Bob’s Red Mill Oat Bran (To make oat flour, simply process oats in the food processor or blender and voila, you have oat flour. You can also use oat bran– it’s high in soluble fiber, which is great for managing high cholesterol).

1/3 cup ground flaxseeds

1 cup almond flour

1.5 cups blueberries, fresh or frozen* (1 cup folded into the mix; 1/2 cup added to the tops right before baking)

*If using frozen, do not thaw.

Instructions:

  1. Preheat oven to 375 F. Grease muffin pan.
  2. Mix all wet ingredients together in one bowl and all the dry ingredients together in another bowl (with the exception of the blueberries). Gradually add the dry ingredients to the wet ingredients.
  3. Gently fold 1 cup of the blueberries into the batter. Pour into a greased muffin pan.
  4. Add the remaining 1/2 cup blueberries to the tops of the muffins and gentle press them into the batter.
  5. Bake for 25-30 minutes, or until a fork inserted into muffins comes out clean.
