Pumpkin Protein Bites

Meet your new Fall obsession: Pumpkin Protein Bites. Creamy, dreamy, and packed with antioxidants and collagen for a radiant glow from the inside out. If you’re looking for a sweet treat but you also want to get your protein in at the same time, then you need to make these ASAP.
Say goodbye to expensive store-bought protein bars and hello to this homemade pumpkin protein-rich treat.
Ingredients:
Pumpkin Protein Bites:
- 1/3 cup pumpkin puree
- 1/2 cup peanut butter (or any nut or seed butter)
- 1/2 cup unflavored collagen powder (I like Great Lakes and Vital Proteins)
- 3/4 cup oat flour (you can blend rolled oats in a blender to make oat flour)
- 2 TBSP honey (more if you prefer them sweeter)
- 1 TBSP pumpkin pie spice
- Pinch of sea salt
Chocolate Coating:
- 1 cup dark chocolate chips (aim for 70% cacao or higher)
- 1 TBSP avocado oil
Instructions:
- Add all of the pumpkin protein bite ingredients to a large bowl and mix well. If the mixture seems too runny, add more collagen and/or oat flour to achieve a thicker dough-like consistency.
- Grease your hands with olive oil or avocado oil. This will help prevent the dough from sticking to your hands while rolling them into balls.
- Roll dough into balls and place on a parchment-lined baking sheet. Freeze for 1-2 hours.
- Make chocolate coating: In a glass bowl, combine chocolate chips and avocado oil. Microwave in 30 second intervals, stirring in between, until it is fully melted.
- Using a fork, dip each protein bite in the melted chocolate and place back on the baking sheet. Freeze for another 1 hour.
