Pumpkin Protein Bites

Meet your new Fall obsession: Pumpkin Protein Bites. Creamy, dreamy, and packed with antioxidants and collagen for a radiant glow from the inside out. If you’re looking for a sweet treat but you also want to get your protein in at the same time, then you need to make these ASAP.

Say goodbye to expensive store-bought protein bars and hello to this homemade pumpkin protein-rich treat.

Ingredients:

Pumpkin Protein Bites:

  • 1/3 cup pumpkin puree
  • 1/2 cup peanut butter (or any nut or seed butter)
  • 1/2 cup unflavored collagen powder (I like Great Lakes and Vital Proteins)
  • 3/4 cup oat flour (you can blend rolled oats in a blender to make oat flour)
  • 2 TBSP honey (more if you prefer them sweeter)
  • 1 TBSP pumpkin pie spice
  • Pinch of sea salt

Chocolate Coating:

  • 1 cup dark chocolate chips (aim for 70% cacao or higher)
  • 1 TBSP avocado oil

Instructions:

  1. Add all of the pumpkin protein bite ingredients to a large bowl and mix well. If the mixture seems too runny, add more collagen and/or oat flour to achieve a thicker dough-like consistency.
  2. Grease your hands with olive oil or avocado oil. This will help prevent the dough from sticking to your hands while rolling them into balls.
  3. Roll dough into balls and place on a parchment-lined baking sheet. Freeze for 1-2 hours.
  4. Make chocolate coating: In a glass bowl, combine chocolate chips and avocado oil. Microwave in 30 second intervals, stirring in between, until it is fully melted.
  5. Using a fork, dip each protein bite in the melted chocolate and place back on the baking sheet. Freeze for another 1 hour.
