Purple Sweet Potato Fries with Avocado Aioli

Purple sweet potatoes are an excellent way to include a hefty dose of antioxidants in your diet. They are a dietary staple in Okinawa, Japan- a blue zone region where individuals have one of the highest life expectancy rates in the world.
Avocados are a great source of healthy monounsaturated fats as well as vitamin E, one of the most important nutrients for the skin, protecting it from oxidative damage. Vitamin E is a fat-soluble vitamin, which means it is best absorbed in the presence of fats at a meal. It has been shown to be more effective when combined with vitamin C- lemon!
Purple Sweet Potato Fries
Ingredients:
- 2 medium purple sweet potatoes, sliced lengthwise into sticks
- 2 TBSP avocado oil
- 1 tsp turmeric powder
- Salt and pepper
Instructions:
- Preheat oven to 375 degrees F.
- On a parchment lined baking sheet, toss sweet potatoes with oil, turmeric, salt and pepper.
- Bake 30 minutes, flipping halfway. Serve with avocado aioli.
Avocado Aioli
Ingredients:
- 1 ripe avocado
- Juice of 1 lime
- 1 TBSP lemon juice
- ½ cup mayo
- Salt and pepper
Instructions:
- Put all ingredients in a food processor or blender and blend until smooth.
