Simple Squash with Turmeric and Walnuts

This is one of my favorite ways to eat squash in the Fall and Winter. I actually eat it for breakfast often. It is easy, warming, and is a great way to incorporate more turmeric in your diet. I like to top it with walnuts for an added crunch and nutritional boost.
You can use any type of winter squash. My favorite is delicata squash as it is sweet and creamy.
Ingredients:
- 1 delicata squash
- 1/2 tsp turmeric
- 1/4 tsp cinnamon
- 1 tsp olive oil
- Salt and pepper
- 1/4 cup walnuts, chopped
Instructions:
- Preheat oven to 400 degrees F.
- Cut delicata squash in half lengthwise. Discard seeds. Set the squash face up in glass pyrex dish with small amount of water at the bottom.
- Bake until the squash is tender, about 30-40 minutes.
- Let the squash cool. Scoop out the flesh and place in a bowl. Season with turmeric, cinnamon, olive oil, salt and pepper. Top with nuts.
