Slow Cooker Chicken Masala (Dairy Free)

This is a super simple, fast and delicious ethnic meal. Even my children like this one!!
2 cloves chopped garlic
1 medium chopped onion
1 14 oz can tomato (sauce or diced)
1 can coconut milk (full fat)
½ tsp cumin
½ tsp coriander
1 tsp paprika
1 tsp Garam Masala
1 tsp turmeric
½ tsp sea salt
1 tbsp lemon juice
Combine sauce with approx. 2 lbs chicken breast. Or add other protein of choice.
Throw the ingredients together in the crock pot and cook for 5-7 hours.
Serve with basmati rice and lots of vegetables. Greens (kale, spinach, collards) and broccoli are my favorites to pair with this.
If grain free – try with riced cauliflower.
Omit the garlic and onion to make this recipe SIBO diet safe.
This recipe freezes well too!
