Super Simple Cleansing Greens

This is my go-to recipe in the winter for cooking those green leafy nutrition power houses: kale, collard greens, rainbow chard, and/or spinach. This recipe is warming, easy and detoxing. What more could you ask for?!I typically double this recipe so I can have an easy lunch prepared for a couple of days.
Super Simple Cleansing Greens- serves 1-2 (these greens cook down!)
1 bunch of greens (rainbow chard is my favorite in this recipe), chopped
1 tbsp coconut oil
1 tbsp balsamic vinegar
1/4 water
1 clove garlic, minced
1 tsp Italian spices- thyme, oregano
Salt and pepper to taste
1/4 cup walnuts, chopped (as a topper)
1-2 tbsp crumbled goat cheese (optional)
Instructions
In a medium skillet, saute garlic in coconut oil for 1 minute over medium heat. Then add greens, balsamic vinegar, water, and spices. Cook over medium-low heat for 5 minutes. Remove from heat and top with chopped walnuts and goat cheese (optional). Enjoy!
