Simple Stir Fry

2 tablespoons olive oil

2 garlic cloves, minced

1 medium onion, minced

1 cup zucchini, sliced

3 large carrots, sliced

8 Cremini mushrooms, sliced

1 large green pepper, chopped

2 tbsp wheat free Tamari (Or coconut aminos)

Sea salt and pepper to taste

Add protein source of choice (chicken, tempeh, grass-fed beef, salmon)

 

Sauté garlic and onion in olive oil over low-medium heat until softened (do not let smoke). Add other vegetables and seasonings; cook, stirring often, until vegetables are crisp-tender. The vegetable listed are just some ideas, use whatever you like or whatever is in your fridge.  If adding poultry or meat, brown in a separate pan with 1-2 tbsp of olive oil before adding to the vegetable mixture. Serve with rice or quinoa.

To save time: buy precut veggie mixes.
