Make your meals less complicated! 5-ingredient quick meals are my favorite, especially in summer. I like the frozen Spicy Mexican-Style Riced Cauliflower from Trader Joes. But if you don’t like spicy food or if you don’t go to Trader Joe’s, any frozen bag of cauliflower rice will do.
Ingredients:
-3 bell peppers
-1 bag of frozen cauliflower rice
-½ can black beans, drained and rinsed
-1/3 cup verde salsa
-1/3 cup shredded cheese
-Cilantro (optional)
Instructions:
1. Prep the bell peppers. Use a knife to cut the tops off the peppers. Use your fingers to remove any membranes and shake out the seeds.
2. Make the stuffed pepper filling. Saute the cauliflower rice in olive oil, then add verde, and black beans. Cook for 5 minutes.
3. Spoon the filling into the bell peppers and top with cheese.
4. Bake at 400 degrees F x 15-20 minutes.
5. Top with cilantro if desired.
