Creamy Spinach Salmon

Creamy Spinach Salmon

Ingredients

  • 1- 16 ounce bag of frozen chopped spinach
  • 1 can coconut milk
  • 3 tbsp Gluten-free soy sauce (Tamari)
  • 2 tsp dijon mustartd
  • 2 tsp Italian blend of herbs- oregano, thyme, basil
  • Salt and pepper to taste
  • 1 pound boneless wild caught salmon fillets
  • Juice of 1/2 lemon

Instructions

Preheat oven to 350 F. In a pyrex baking dish, stir to combine all ingredients other than the salmon. Place the salmon atop the spinach mixture, skin side down. Bake for 25-30 minutes, or until salmon is cooked through. Periodically spoon the spinach mixture over the fish while it is cooking.
