Green Pea Pesto

For a play on pesto, try this Green Pea Pesto. It is great as a dip for raw veggies. It also works well on top of fish or chicken.

Green Pea Pesto

Ingredients

  • 1  16 oz bag of organic frozen peas, thawed
  • 1/4 cup pine nuts
  • 4 tbsp olive oil
  • 1/4 cup Parmesan cheese (or 1/4 cup nutritional yeast, found in bulk section at health food store, if you are dairy sensitive)
  • 1/2 cup fresh basil leaves
  • Salt and pepper to taste

Instructions

Puree pine nuts in food processor. Scrape the pureed nuts from the side of the food processor. Add all other ingredients and process until nearly smooth. Enjoy!
