Sweet Potato Toast with Avocado and Sauerkraut

This is a healthy twist on an all time favorite- avocado toast. Ditch the bread and use sweet potatoes instead! Sweet potatoes can be sliced thinly and popped in your toaster just as you would bread. You can get creative with sweet potato toast….consider topping with almond butter, honey, and flax. I like to use Zymbiotics sauerkraut. I buy this beautiful purple sauerkraut (aka “Zauerkraut“) at Outpost in the fridge section. Always buy sauerkraut in the fridge section (not shelf-stable) to ensure you have a REAL fermented food with live cultures. Fermented foods improve gut health, support the immune system, decrease allergies, and even improve your mood! I like to think of fermented foods as the dietary equivalent of a daily meditation practice.

Ingredients:

  • 2 slices of sweet potato, sliced length-wise (approx 1/4 inch thick)
  • 1/2 avocado, mashed
  • 1/4 cup sauerkraut
  • 2 TBSP hemp seeds
  • Salt and pepper to taste

Instructions:

  1. Pop the sweet potato slices in the toaster (on highest setting) and toast 3-4 times.
  2. Top the sweet potatoes with mashed avocado, sauerkraut, and hemp seeds. Season with salt and pepper.
