Wakame Seaweed Salad

Wakame is a type of seaweed, rich in minerals. In this salad, you’ll get:
Iodine (great for thyroid & breasts)
Calcium (strong bones)
Iron (boosts energy)
Magnesium (relaxation)
Omega-3s (heart & 🧠fats)
Fiber (gut health)
And so much flavor!!
This is an excellent addition to salads or bowls.
*It will keep in the fridge for 5 days.
Ingredients:
– 1 cup wakame, dried and cut
– 6 cups warm water
Dressing:
– ¼ cup rice vinegar
– 2 TBSP honey
– 2 TBSP soy sauce, tamari, Bragg’s or coconut aminos
– Â Â Â 1 TBSP sesame oil
– 2 TBSP sesame seeds
– 1 cup edamame, shelled and thawed
– ½ cup cucumber, sliced thin
– ½ cup carrots, grated
Instructions:
1. In a large bowl, soak the dried wakame in warm water for 10 minutes until rehydrated.
Once the wakame is done soaking, drain the water and set the wakame aside in a large
bowl.
2. For the dressing: in a small bowl, whisk together dressing ingredients.
3. Add the edamame, cucumber, carrots and prepared dressing to the wakame and toss to
combine.
